One bite of these rice crispy treats and you won't think of rice crispy or rice krispies treats in the same way.

I love sweets, but there are a few things that bother me about the traditional way of creating decorative desserts. For one, the decorations themselves are lacking of flavor, they just look pretty and the other thing is that often enough there is no special attention paid to the flavor of the main mix or batter, such as in cookies, cakes or in this case rice crispy treats.

So why not add extra flavor to our rice crispy treats?

And indeed I did...peppermint. And I'm telling you, you have to make 'em and eat 'em yourself to see, ur, I mean, taste what I mean.

How to Make Candy Cane Rice Crispy Treats with Real Peppermint

Ingredients:

  • 6 Cups Frosted Crisped Rice Cereal
  • 3 Tablespoons of Butter (sticks)
  • 1 Bag of Mini Marshmallows (10 oz bag)
  • 1/4 Cup Pulverized Candy Canes/ 8-10 Mini Canes
  • 1 Drop of Peppermint Candy Flavoring
  • 1 Package of White Chocolate Chips (12 oz.)/ Merckens®Chocolate Coating Wafers (12 oz.)
  • 4-5 Drops Red Oil-Based Food Coloring (must be oil based to use for chocolate)
  • Red Colored Sugar Crystals

Supplies (These are items that you should already have):

  • Large Mixing Bowl
  • Large Sauce Pot
  • Wooden Spoon
  • Cooking Spray
  • Hammer or Rubber Mallet
  • Sealable Plastic Sandwich Bag
  • Large Glass Casserole Dish
  • Candy Cane Cookie Cutter
  • Paint Brush for Candy-Making
  • 2 Small Microwaveable Bowls
  • Spoon
  • Toothpicks
  • Rubber Spatula

Ingredients and Supplies

Here is an image of the supplies and ingredients you will need. Please note some of these are optional, like the paint tray, and some were left out by mistake, like the microwaveable bowls for melting the chocolate. You can get many of the ingredients or supplies you need at craft stores or candy-making supply stores like Candyland Crafts. I have added links on this page to ingredients and supplies of what I recommend to use.



Casserole Dish for RCT

1. Spray glass casserole dish and set aside. Set cereal in large mixing bowl and set aside.

2. Place candy canes in plastic sealable bag and lightly pound with rubber mallet on counter top (for the protection of your counters place cutting board on top of counter first). Set aside.

3. Melt butter in sauce pot on low heat. Once starts to melt add package of marshmallows. Stir with wooden spoon.

4. Once completely melted and in liquid form remove from heat. Add one drop of peppermint candy flavoring and stir well.

5. Pour marshmallow mix from sauce pot into cereal in large bowl. Spray wooden spoon with cooking oil and stir well. Add a small amount of the candy cane then stir. Do this several times until the candy is used up.

6. Press mix into casserole dish then place in refrigerator for about 15-20 minutes to harden faster.

7. Remove from refrigerator and press cookie cutter into mix. Form shapes throughout entire casserole dish. Use left over mix to press to top off filled cookie cutter. Stuff as much mix into the cookie cutter for each rice crispy treat (more than I did with the image above). The fuller the treat, the easier it will be
to cover in chocolate and the more
uniform each treat will be. Set treats
on tray and keep aside for the time being.

8. In small microwaveable bowl place small amount of Merckens white chocolate chips or wafers. On 40% power warm chocolate for 50 seconds. Remove and stir. If soft and liquidy go to next step, if not repeat step, but in 10-second intervals. (Make sure to reset power each time.)

9. Spread chocolate onto each treat with spatula, sides and tops. Repeat melting process until all treats are covered. After finished set in fridge again for another 15-20 minutes.

10. Melt some more white chocolate chips or wafers, but this time add 4-5 drops of red oil-based food coloring. Stir until no signs of white show.

11. Remove treats from fridge and with candy paint brush create stripes. Immediately after creating a stripe add on red sugar crystals, then shake off excess sugar. Repeat same step for all treats. Melt more chocolate if need be.

TIP: Only melt small amounts of chocolate at a time since you do not know how much you will need and the chocolate will harden.
