Chocolate Chip Cheesecake

  • 1 Cup Chocolate Wafer Crumbs
  • 3 Tablespoon Margarine, Melted
  • 24 oz Cream Cheese, Softened
  • 3/4 Cup Sugar
  • 1/4 Cup Unbleached All-Purpose Flour
  • 3 Large Eggs
  • 1/2 Cup Sour Cream
  • 1 Teaspoon Vanilla Extract
  • 1 Cup Mini Semi-sweet Chips
  • Directions

    1. Preheat oven to 350 degrees F.
    2. Combine crumbs and magarine; press onto bottom of 9-inch springform pan.
    3. Bake for 10 minutes on middle rack. Remove from oven when done.
    4. In the meantime, combine cream cheese, sugar and flour. Mix at medium speed with electric mixer until well blended. Add eggs, one at a time, mixing well after each addition.
    5. Blend in sour cream and vanilla.
    6. Stir in chocolate chips and pour into crust. With the oven still at 350 degrees F. bake for 55 minutes.
    7. Loosen cake from rim of pan. Cool before removing rim of pan. Chill.

    ***TIP: For an even tastier-looking presentation cover the top of cheesecake with more chocolate chips once cake is cooled.

    ***TIP: Or garnish the top end of each piece with a small mound of whipped cream and a fresh mint leaf.
