Chocolate Cupcakes with Cherries

Chocolate Cherry Cupcakes

Yum! Chocolate cupcakes with cherries on top and in the middle.

  • 1 package chocolate cake mix
  • 1 1/3 cups water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 can cherry pie filling
  • 1 can vanilla or chocolate frosting

  1. In a mixing bowl, combine cake mix, water, oil and eggs; mix well. Spoon batter by 1/4 cupfulls into paper-lined muffin cups. Spoon a rounded teaspoon of pie filling onto the center of each cupcake. Set remaining pie filling aside.
  2. Bake at 350 degrees F for 20-25 minutes or until a toothpick inserted comes out clean.
  3. Let cool in pan for about 5 minutes then remove to a wire rack to cool completely.
  4. Once completely cool spread each cake with the vanilla or chocolate frosting then top each with one or two cherries from pie filling.

Chocolate Fudge Cupcakes

If they like rich chocolate then try these chocolate cupcakes.

  • 4 (1 ounce) squares semisweet chocolate, chopped
  • 1 cup butter
  • 1 cup all-purpose flour
  • 1 3/4 cups white sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 cups chopped pecans
    1. Preheat oven to 325 degrees F. Line 24 muffin cups with paper liners.
    2. In the top of a double boiler, combine chocolate and butter. Heat, stirring occasionally, until mixture shows signs of melting. Stir then remove from heat and allow to cool down a bit.
    3. Combine sifted flour and sugar in a mixing bowl. Beat in eggs one at a time with a mixer on low speed. Stir in chocolate mixture, vanilla and pecans.
    4. Fill muffin cups 2/3 full.
  • Bake in the preheated oven for 25 minutes. Remove once inserted toothpick comes out clean . Cool in pan for 5 minutes then cool completely on cupcake rack or just outside of pan on a plate.

    Cookie Dough:

    • 1 1/2 cups all-purpose flour
    • 1/4 teaspoon baking soda
    • 1/4 teaspoon sea salt
    • 1/2 cup butter, softened
    • 1/4 cup white sugar
    • 1/2 cup brown sugar
    • 1 egg
    • 2 teaspoons vanilla extract
    • 1 cup mini semisweet chocolate chips

    Cupcake Filling:

    • 1 box yellow cake mix
    • 1 1/3 cups water
    • 1/3 cup canola oil
    • 3 eggs

    1. Whisk together the flour, baking soda, and sea salt; set aside. Beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add 1 egg and the vanilla extract and beat until smooth. Mix in the flour mixture until just incorporated. Fold in the chocolate chips; stir until evenly mixed.
    2. Make balls from dough about a tablespoon worth. Place onto a baking sheet and place in freezer until hard, about 2 hours.
    3. Preheat an oven to 350 degrees F. Line 24 muffin cups with paper liners.
    4. Beat 3 eggs in a large bowl with an electric mixer. Add the cake mix, water, and canola oil and continue to beat for 2 minutes on medium speed.
    5. Spoon into the prepared cupcake liners about 2/3 full. Place a frozen cookie dough ball on the top center of each cupcake.
    6. Bake until a toothpick inserted into the cake portion of the cupcake (not the cookie dough ball) comes out clean, about 20 minutes.
    7. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

    WARNING: Please be aware with cookie dough ice cream you are eating raw eggs. Eat in moderation.


    Triple-Chocolate Cupcakes

    These chocolate cupcakes have triple the fun- three different kinds of chocolate. What else would they want?

    • 1 cup self-rising flour
    • 1/4 teaspoon baking soda
    • 3 tablespoons unsweetened cocoa powder
    • 1/4 cup sugar
    • 1/4 milk chocolate chips
    • 1/4 cup white chocolate chips
    • 1/4 cup semi-sweet chocolate chips
    • 1 egg
    • 3/4 cup of milk
    • 2 tablespoons softened butter

    1. Whisk the flour, baking soda and cocoa powder. Stir in sugar milk chocolate chips, semi-sweet chips in mixing bowl. Mix the egg, milk and butter in a separate mixing bowl.. Stir in this mix to the flour mix until consistently moist.
    2. Preheat oven to 350 degrees F. Place cupcake liners into a 6-cupcake pan and fill each about 2/3 full. Bake until a toothpick inserted into the cakes comes out clean. Bake about 20 minutes.
    3. Cool for a few minutes before cooling on wire rack
    4. Melt white chocolate chips in microwave-safe bowl for about a minute. Chips will not be completely melted, but mix them in this state until smooth. If still has lumps melt in microwave another 10 seconds then stir again. Spread chocolate on top of cakes once they are completely cooled.

    If the chocolate frosting wasn't enough, then the chips will tantalize their taste buds.

    • 1 cup self-rising flour
    • 1/4 cup sugar
    • 1 cup milk chocolate chips
    • 1 egg
    • 1/2 cup milk
    • 3 tablespoons softened butter
    • 1/2 teaspoon vanilla extract
    • Vanilla or chocolate premade frosting

    1. Place 6 cupcake liners into cupcake pan. Preheat oven to 350 degrees F.
    2. Whisk the flour and sugar, then stir
      in a 1/2 cup of chocolate chips. Set the remaining chips aside. In a
      separate bowl, mix egg, milk, butter
      and vanilla. Stir this mix to the flour mix.
    3. Spoon mix into cupcake liners into prepared cupcake pan.
    4. Bake about 20 minutes until toothpick inserted into the top comes out clean. Keep in pan for about 5 minutes, then cool on cupcake rack.
    5. Once cupcakes are cool, spread frosting on each with spatula or butter knife then sprinkle the rest of the chips onto the cupcakes. Add sprinkles too if you want. :)
