These coconut macaroons are just for you then.

This macaroon cookies recipe is easy to make and once you start putting these cookies in your mouth you won't be able to stop eating them. These soft and chewy cookies are delicious on there own or dip them in your favorite chocolate (dark, milk or white). You can even plop a few drops of raspberry jam on top.

Make a batch for yourself or surprise someone with an edible gift. Say "hello" or say "thank you". Toss some in a decorative gift bag or in a cookie tin. Mix them with other macaroon cookies for a variety of flavor.

Coconut Macaroons


  • 3/4 Cup Granulated Sugar
  • 2 1/2 Cups unsweetened shredded coconut
  • 2 large egg whites
  • 1 tsp pure vanilla extract
  • pinch of salt


  1. Preheat oven to 325 degrees F. Line baking sheet with parchment paper.
  2. In large bowl, combine sugar, coconut, egg whites, vanilla and salt
  3. Using your hands, mix well, completely combining ingredients.
  4. Dampen hands with cold water. Scoop 1 1/2 teaspoons of batter onto prepared baking sheet to form mounds, space them about 1 inch apart.
  5. Bake until golden brown on edges, 16-17 minutes, rotate sheet about halfway through.
  6. Cool cookies on wire rack.
