No Bake Hazelnut Chocolate Squares

No Bake Hazelnut Chocolate Squares


  • 1/2 cup whole hazelnuts
  • 2/3 butter (cut up)
  • 5 oz semi-sweet chocolate (coarsely chopped)
  • 2 tablespoons light corn syrup
  • 1/8 teaspoon salt
  • 1 1/4 cups graham cracker crumbs


  1. Preheat the oven to 325 degrees F to toast the hazelnuts.
  2. Line an 8-inch baking pan with wax paper. Allow ends to hang over edge for something to grab onto. Spray with cooking oil to lubricate.
  3. Place nuts on a medium or large baking sheet. Toast for about 7 minutes. Do NOTover bake or they could burn. Remove from oven and place in largecotton kitchen towel. Fold over towel and lightly rubit together to remove inner skins. Pick up the nuts and chop coarsely.
  4. Melt the butter and chocolate with the salt in a double boiler over lightlysimmering water.
  5. Remove from heat and stir in the graham cracker crumbs and chopped hazelnuts and mix until well blended.
  6. Press the mixture into the prepared pan, covering the entire bottomin an even layer.
  7. Refrigerate for about 1 hour until sets (mixture hardens).
  8. Grab each end of the wax paper that sticks out over the edge of the pan and lifthardened mixture out of pan.
  9. Peel off wax paper and place mixture on a cutting board. Cut with sharp, chef's knifeinto squares.
