Marshmallow Brownies

Do you know what these Marshmallow Brownies did to me? They made me into a brownie fan. A friend from work asked me to switch days off because she had some family coming into town and wanted to spend some time with them. To help entice me into giving up much beloved Sunday she offered to make me some brownies. So I'm sitting there reading her email thinking, "Hey, I'm Rick, I know how to bake, in fact, I have my own website. Ok, so maybe she could make something for my wife. What does she like, oh, chocolate of course, maybe Brittany could make her some brownies." So I asked Brittany to make some brownies for my wife, the huge chocolate fan that she is. Brittany comes over to my desk a few days later with three plates full of brownies, each plate has a different kind and explains she went all out baking. I'm sitting there with three plates of different types of brownies thinking, "Why do I need all these, even my wife won't eat 'em all. I figured I'd try them out, why not, right?

Now I don't consider myself a brownie, fan. I like them, but they make me super thirsty. I figured I'd start with the fanciest one- Marshmallow Brownies. I put one in mouth- zing! What? These are awesome! I put a second in my mouth, bits of a third. Next thing you now I'm down to about 2 plates and a sense of embarrassment because they were supposed to be for my wife. I'm telling you these are good! They're moist and very rich in chocolate. I admit I did not even get thirsty this time. I asked her for the recipe so I could share it with you all. Enjoy!

Marshmallow Brownies Recipe

Ingredients for Brownies

4 ounces unsweetened chocolate
2 sticks unsalted butter
4 large eggs
2 cups sugar
1 tsp vanilla extract
1 cup all purpose flour

Ingredients for Marshallow Mixture

4 ounces unsweetened chocolate
2 sticks unsalted butter
1/2 cup egg substitute (i use store brand or egg beaters)
1 tsp vanilla extract
1 box confectioners sugar
half a bag of mini marshmallows (more or less, depending on how much
you like them)

Directions for Brownies

1. Preheat to 350
2. Grease pan 12x9
3. Melt chocolate and butter in a pot stir until choc and butter are completely melted. Turn heat down to low almost off.
4. Add eggs, sugar, vanilla and mix well then add flour slowly.
5. Pour into pan and bake for 25-30 min.

Directions for Marshmallow Mixture

1. Melt chocolate and butter in a pot and stir until choc and butter are completely melted. Turn heat down to low almost off.
2. Add egg substitute, vanilla, sugar and stir until smooth.
3. Stir in marshmallows, allow them to soften but not melt completely
4. Spread over the warm brownies and allow to cool completely and then cut the brownies into squares.
