I love homemade Rice Crispy Treats, or often called rice krispies treats. They are not only tasty, but filling. Who didn't love eating these marshmallow treats growing up- and still doesn't? There are many ways to make these delicious treats, chocolate covered, peanut butter, both peanut butter and chocolate, with chocolate chips, butterscotch, caramel, sprinkles, frosting, they can be shaped, add a popsicle stick, on and on. How to Make Shaped and Decorated, Chocolate Covered Rice Crispy Treats
Decorated rice crispy treats make great party favors or gifts for special occasions. The methods I use to shape and decorate them are similar to how you shape and decorate sugar cookies. Except I have a unique, less messy and cleaner way of doing it.
These rice krispies treats are more than meets the eye, not only do they look cool but I've added some new flavors. Theese treats are out of this world. Chocolate Covered Rice Crispy Treats
A twist to the original rice crispy treats recipe. Unique shapes
and covered in thick milk chocolate. You could even add toppings.
- 1/4 Cup of butter (1/2 stick of butter)
- 4 Cups of mini marshmallows
- 6 Cups of crisped rice cereal
- 1 tsp Vanilla Extract
- 1 bag of milk chocolate chips
- 2 tbsp vegetable oil
- Start by making the rice crispy mix. You can either
use the microwave or stove. I will use the stove here.
- In a medium or large saucepan, add marshmallows
and butter. Set on medium heat just enough to melt the
butter.
- Add vanilla extract and stir some more. Pour
in rice crispy cereal. Remove from heat and stir until mixed
thoroughly.
Marshmallows will be gooey and
create streaks.
- Place in medium sized mixing bowl.
- Spray fingers with cooking spray and push
a handful of the mix into a mini cast bundt pan with different
shapes. Use up entire mix.
- Remove all shapes from pan. Place baking
sheets covered with wax paper. Leave space between each treat.
Now it's time to melt the chocolate!
- You could use a double boiler or the microwave.
Let's just use the microwave here.
- Pour the chips in a medium sized microwaveable
bowl. Add the oil and melt for 1 minute. Chips will not be completely melted.
- Stir with metal spoon until as liquid as possible. If you still have lumps from the chips melt in microwave for another 10 seconds then stir.
Continue with same process until completely liquid.
- Immediately start spooning chocolate over one treat at a time. Use spatula to smooth over treats until completely covered.
- Set in refrigerator to cool for at least an hour.
Peanut Butter Rice Crispy Treats
Another unique recipe with a great taste.
- 1/4 Cup of butter (1/2 stick of butter)
- 4 Cups of mini marshmallows
- 6 Cups of crisped rice cereal
- 1 tsp Vanilla Extract
- 1/2 Cup of Peanut Butter
- 2 tbsp vegetable oil
- Start by making the rice crispy mix. You can either
use the microwave or stove. I will use the stove here.
- In a medium or large saucepan, add marshmallows and butter. Set on medium heat just enough to melt the butter.
- Add vanilla extract and stir some more. Pour in rice crispy cereal. Remove from heat and stir until mixed thoroughly.
Marshmallows will be gooey and create streaks.
- Place in medium sized mixing bowl.Spray fingers with cooking spray and push into a 13 x 9 cake pan or glass casserole dish. Use up entire mix.
- Set aside and wait until mix is hard. Cut into bars with sharp knife.
Chocolate Covered Peanut Butter Rice Crispy Treats
A concoction of some awfully delicious ingredients! Now this is getting fun!
- 1/4 Cup of butter (1/2 stick of butter)
- 4 Cups of mini marshmallows
- 6 Cups of crisped rice cereal
- 1 tsp Vanilla Extract
- 1/2 Cup of Peanut Butter
- 2 tbsp vegetable oil
- 1 bag of milk chocolate chips
You can either use the directions from the peanut butter recipe or the chocolate covered version from above. It depends if you wish to make shapes out of your treats or bars.
TIPS: for variations replace chocolate chips with butterscotch chips or caramel melting beads or candies. Add sprinkles.

First, make the rice crispy treat mix. Line baking sheet with wax paper and set aside.
Pour 4 cups of mini marshmallows and 1/4 cup of butter (half stick) into medium saucepan on medium heat. Stir mix as butter melts until it becomes sticky and gooey.
Add 1 teaspoon of vanilla extract to add some additional flavor.
Pour in 6 cups of rice crispy cereal. Remove from heat and stir until entire mix is sticky. Then pour into large mixing bowl to cool a bit.
Next spray fingers with cooking spray each time before you touch mix and press a handful into some cake mold pans. You can use many different molds, bigger or individual small ones like shown above. You could even use a flat pan then later cut mix into square shapes.
Here I use a double boiler. I prefer the double boiler over using the microwave because it is easier to monitor the chocolate. You can use two saucepans to earn the same results, one smaller pans inside a bigger pan.
First, add the water into the bottom and set to medium heat. Just enough to heat up the water without bringing it to a boil.
Next, place a bag of milk chocolate chips and 2 tablespoons of vegetable oil into the top pan. Let sit until chips show signs of deformation and then stir. Let sit a bit longer and stir again until completely smooth. Remove and set on towel or heat pad next to baking sheet.
WARNING:
Do NOT leave stove. If chocolate burns you risk having to start over. If the chocolate does overheat and get too thick then add a teaspoon of oil.
Pick up each piece of molded treat and dip into pan of chocolate upside down. Next, place each piece onto baking sheet. After all pieces are placed on sheet you could use spread chocolate on the sides of each piece with a spatula.
You could add sprinkles or colored sugar now before chocolate hardens.
Place baking sheet aside in room temperature for at least 30 minutes to allow chocolate to harden.
Place in sealed container lined with wax paper.
