Strawberry Pinwheel Cookies



Ever try icebox cookies? Do you like strawberry flavored cookies?

Then you will like this strawberry pinwheel cookies recipe. That red swirl and strawberry taste are hard to resist. Everyone will ask how you made them. They look like lollipops except not stick (although you could add one to make a lollipop cookie).

Surprise someone with a batch that loves cookies. (You could make me some, just sayin.) Say "thank you" to your kid's teacher with a batch or take some to his or her class to enjoy, make some for your family to enjoy at home.

These icebox cookies could even be baked later. Store the dough in the freezer for up to a month or in the fridge for a week to bake later. Save it for a rainy day or for when guests come to visit. Whatever the case these strawberry cookies will bring smiles to many faces for both their look and taste.

Strawberry Pinwheel Cookies

Ingredients

  • 2 cups all-purpose
  • 1/8 teaspoon salt
  • 1/2 cup finely ground almonds
  • 1/2 cup granulated sugar
  • 1/3 cup butter (cut up)
  • 1 large egg (lightly beaten with 2 tablespoons cold water)
  • 1/4 cup strawberry preserves

Directions

  1. Sift the flour and salt into a large bowl.
  2. Stir in the almonds and sugar.
  3. Use a pastry belnder to cut in the butter until the mixture resembles fine crumbs.
  4. Mix in the egg mixture to form a firm dough.
  5. Turn the dough out onto a lightly floured surface and knead until smooth.
  6. Transfer to a large sheet of parchment paper and roll out onto a 10x14-inch rectangle. Spread evenly with the strawberry preserves and tightly roll up the dough from thelonger side of the parchment paper (not the ends).
  7. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  8. Preheat the oven to 350 degrees F.
  9. Line two cookie sheets with parchments paper.
  10. Slice the dough into 1/2 inch thick disks and place on prepared cookie sheets 1/2 inch apart.
  11. Bake for 12-15 minutes until edges are golden brown. Rotate sheets halfway through baking time.
  12. Cool on wire racks.
